U Must Try THIS: Zupa's Copy-Cat Cauliflower Soup

I know it's summer, so the last thing on most people's To Do List is "Make Cauliflower Soup."

But this is INCREDIBLE cauliflower soup.

Like, my kids can't stand cauliflower, but they get it EVERY time we go to Zupas. (PS: Zupas doesn't know me, but if you are in Utah, Nevada, and Arizona, they have locations near ya. Jussayin'.)

Anyway, I have a huge bag of cauliflower, so we decided we are going to try and copy-cat Zupa's recipe for Wisconsin Cauliflower soup tonight.

And just in case it doesn't turn out supa, we're making bread. (You can always fill in the gaps with a big chunk of bread. Carbs have a way of making everything A-OK.)

PS: In other news ...


1. Our girls are babysitting the neighbors' dogs while they are on vacation.
I hope they don't run out of batteries because I'd hate to see Jamal without his ANGRY EYES.
What the what? This photo scares me. What are we babysitting? Pitbulls?


2. I bought lavender--home-grown lavender--from our 11 yo neighbor last night.
No idea what to do with it, but look how cute it is. I feel like Half-Pint on Little House On The Prairie.
(Look it up, young ones.)
 
3. I made carrot juice for the first time yesterday.

The juice looked beautiful, but tasted very, well, very organic. I thought our kids were going to barf. Literally.
Jr. said, "I feel sick," after he drank it.
To which I laughed and said, "Finish the cup--it's so good for you." (Nah, I said, "Eeek. Are you okay?")

PS: I apologize for the shameless plug for BlendTec. I have zero ties to BlendTec.
And, I've always used a basic Target blender--minus the lid, which I lost. Truly, for my whole marriage.

But my friend Janae got a BlendTec a few years ago and I've been secretly wanting it every day since she got it. It's incredible! And I'm pretty sure it can blend batteries. So ... after Survivor I told Dave, "If I had won the million, I would have bought that damn blender." To which Dave said, "We're buying that blender. It will last 10+ years. I had no idea you wanted it. You for sure earned a blender after two times on Survivor." Hahaha.

I know, First World Problems. But they're real to me.

Thank goodness for Dave. He keeps things in perspective for me.


4. And just for fun, here's a photo of our beloved cat, Fahjdi (FATTY).

He's been gone for 4+ years (crossed over), but man, we love our memories of that cat!
