PAPAYA'S BDAY TOMORROW ... and One-Pot Pasta Recipe!

Image
Tomorrow is our sweet Papaya's 15th BIRTHDAY! We are so excited to celebrate! And I know I say this a lot (and it sounded so cheesy when I heard adults say it when I was a kid), but "TIME IS FLYING." I truly remember every single detail of her adoption as if it were yesterday.  Every detail: --The weather the day we got the phone call from our dear friends at church, telling us they had a family member who was considering adoption for her beautiful bambina. --The movie and scene that were playing on tv when I answered the phone to find out that their family member wanted to meet us ... tomorrow! Jr Climbs King's Peak w/ Scouts

Image
Scout Troop atop King's Peak (Jr in back row, far right: Bandana Man-Child.).   Last weekend Jr and his Scout troop climbed/hiked King's Peak --the highest peak in Utah (13,500+ ft).  It really was a "Survivor-type" experience for Jr.: he was able to challenge himself on SO many levels. And he did such a great job (he's such a strong young man). We're proud of you for completing this GIGANTIC goal, Jr. (And we're so thankful to your leaders for preparing and guiding you along the way.)   **** PS: This morning's walk: Lu and Zu--up a little earlier than usual. This fella joined us. Psst: THE biggest bug I've seen since Survivor. Eeek! (PS: Zu begged me to let her hold it. I'm medium on bug-holding. How about you?)
