My Elvis Tribute: Elvis Granola!
For some reason I'm in an Elvis kinda mood.
I think it has something to do with the fact that our daughter, Bam, loaded the Lilo & Stitch soundtrack onto my iPod, so I've been listening to The King as I workout each morning.
Nevertheless (Which means . . . what? Never less? Huh?) . . .
I wanted to make this Elvis Week at our house, and so, we're doing All Things Elvis:
--listening to XM's Elvis Station
--watching an old Elvis movie
What? Elvis didn't eat granola?
Maybe he did--in between those fried peanut butter and banana sandwiches.
You never know!
Besides, even if Elvis didn't eat granola, he would have--if he was able to eat his very own
ELVIS GRANOLA!
So, if you're a granola fan--AND an Elvis fan--you have to try this recipe. I'm tellin' ya it's just good clean fun!
PS: Some call it a dessert granola. (Ahem, Janae.) Not me. I call it breakfast with The King.
Elvis Granola (from EatLiveRun)
1/4 cup canola oil
1/3 cup maple syrup
1/4 cup chunky peanut butter
1/2 tsp salt
1 tsp cinnamon
4 cups old fashioned oats
1/4 cup ground flaxseeds
1/2 cup dry roasted peanuts
1/2 cup sunflower seeds
2/3 cup chopped dark chocolate (or miniature chocolate chips)
* PS: Add banana chips or bacon bits for extra ELVIS-ness
Directions:
Preheat oven to 275.
Bring the canola oil, maple syrup, peanut butter, salt and cinnamon to a simmer on the stove. Cook for three to five minutes.
While that’s cooking, mix together the oats, ground flax, peanuts and sunflower seeds. Pour hot syrup mixture over the oats and toss well to coat. Spread out granola onto two lined sheet trays and bake for 40 minutes, stirring occasionally and turning trays midway through.
Let granola cool completely before adding the chopped chocolate.
Time:
1.5 hours (including cooling time)
** This granola will stay fresh for about a month sealed in tupperware and kept in the freezer. (Just take out single servings directly from the freezer. This keeps your granola crunchy!)
PS: It's been an hour since my post and I'm DYING! Today is the anniversary of Elvis' death--and I had no idea! How is it possible that I posted an Elvis Tribute ON this day, and had NO IDEA of the coincidence. I feel slightly psychic. For real!
